Understanding Your Coffee Beans
The journey begins with understanding your coffee beans. The origin, roast level, and grind size all play crucial roles in the final flavor profile. We source our beans from sustainable farms across Central and South America, each region bringing unique characteristics to your cup.
Origin matters: Colombian beans offer balanced acidity and sweetness, while Guatemalan beans provide rich body and chocolate notes. Ethiopian beans bring floral and fruity characteristics that shine in pour-over methods.
The Science of Water
Water quality is often overlooked but equally important. We use filtered water heated to precisely 195-205°F (90-96°C) for optimal extraction. Too hot, and you'll extract bitter compounds; too cool, and you'll under-extract, resulting in sour, weak coffee.

Brewing Methods & Timing
The brewing time varies by method, and each technique brings out different aspects of the coffee:

- Pour-over: 3-4 minutes for full flavor development. The slow, controlled extraction highlights the coffee's subtle notes.
- French Press: 4 minutes steeping time. The immersion method creates full-bodied, rich coffee with natural oils intact.
- Cold Brew: 12-24 hours steeping. The long, cold extraction produces smooth, low-acid coffee perfect for hot days.
The Golden Ratio
At Alderbay, we use a ratio of approximately 1:15 to 1:17 (coffee to water) for most brewing methods. This translates to about 30 grams of coffee for 500ml of water. However, don't be afraid to adjust based on your taste preferences.
Grind Size Matters
The grind size affects extraction rate and should match your brewing method:
Coarse grind: French press, cold brew
Medium grind: Pour-over, drip coffee
Fine grind: Espresso, stovetop espresso makers
Temperature and Timing
Consistency in temperature and timing is crucial. We recommend:
